Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated zucchini, shredded carrots, applesauce, honey, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.

  6. Divide the batter evenly among the muffin cups.
