Zucchini Corn Chowder

Ingredients

  • 2 cups diced zucchini
  • 1 cup corn kernels
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and sauté until translucent.
  3. Stir in zucchini and corn, cooking for about 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in heavy cream and season with salt, pepper, and thyme.
  7. Blend if desired for a smoother texture, then serve hot.

Notes

  • For a vegan version, substitute heavy cream with coconut cream.
  • Adding a pinch of cayenne pepper can spice it up!
