A comforting and creamy winter dish that celebrates the flavor of squash combined with fragrant sage and rich parmesan.

Ingredients

  • 1 cup Arborio rice
  • 2 cups diced winter squash
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh sage leaves, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a pot, heat the vegetable broth and keep it warm.
  2. In another pot, heat olive oil over medium heat, add onions and garlic, and sauté until translucent.
  3. Add the diced winter squash and cook until it begins to soften.
  4. Add the Arborio rice, stirring for a few minutes until it’s well-coated.
  5. Pour in a ladle of warm broth, stirring constantly until absorbed.
  6. Continue adding broth gradually, stirring frequently, until the rice is creamy and al dente.
  7. Stir in Parmesan cheese and sage, and season with salt and black pepper to taste.
  8. Serve hot, garnished with more sage and cheese if desired.

Notes

  • For a vegan option, omit the cheese or substitute with a vegan alternative.
  • Feel free to add other herbs or spices to customize the flavor.
