- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 3 cans white beans, drained and rinsed
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups kale, chopped
- 1 tablespoon lemon juice
- In a large pot, heat olive oil over medium heat.
- Add turkey bacon and cook until crispy. Remove and chop.
- Add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for 1 minute.
- Pour in the chicken broth and bring to a boil.
- Add white beans, thyme, salt, and pepper. Reduce heat and simmer for 20 minutes.
- Stir in kale and chopped turkey bacon. Cook until kale is wilted.
- Finish with lemon juice before serving.
Notes
- For a vegan version, omit the turkey bacon and use vegetable broth.
