White Bean Soup with Bacon

A comforting white bean soup made with turkey bacon for a healthier twist.

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 3 cans white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups kale, chopped
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and chop.
  3. Add onion, carrots, and celery. Sauté until softened.
  4. Add garlic and cook for 1 minute.
  5. Pour in the chicken broth and bring to a boil.
  6. Add white beans, thyme, salt, and pepper. Reduce heat and simmer for 20 minutes.
  7. Stir in kale and chopped turkey bacon. Cook until kale is wilted.
  8. Finish with lemon juice before serving.

Notes

  • For a vegan version, omit the turkey bacon and use vegetable broth.
  • Top with freshly grated parmesan for extra flavor.
