White Bean Soup with Lemon and Orzo

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup orzo pasta
  • 1 lemon, juiced and zested
  • 2 teaspoons thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Soak the beans overnight in water.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add soaked beans and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 1 hour, or until beans are tender.
  6. Add orzo, lemon juice, lemon zest, thyme, salt, and pepper; cook for an additional 10 minutes until orzo is cooked.
  7. Adjust seasoning and serve warm.
