Veggie Pot Pie Soup

A warm and satisfying soup that captures the essence of a classic pot pie.

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 2 tablespoons all-purpose flour
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup milk or plant-based milk

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Stir in the carrots and potatoes, and cook for about 5 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the vegetables are tender.
  6. In a separate bowl, mix the flour with a little bit of water to create a slurry, then stir it into the soup.
  7. Add the peas, soy sauce, thyme, salt, and pepper, then cook for an additional 5 minutes.
  8. Stir in the milk and heat through before serving.

Notes

  • For added flavor, use homemade vegetable broth.
  • Feel free to add other veggies like corn or green beans.
