  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 2 cups diced potatoes
  • 1 cup non-dairy milk
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cooking until softened.
  3. Add carrots, celery, and thyme; cook for another 5 minutes.
  4. Add potatoes and vegetable broth; bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in peas and non-dairy milk.
  7. Mix cornstarch with a bit of water and add to the soup, stirring until thickened.
  8. Season with salt and pepper, and serve hot.
