Veggie Breakfast Tacos

A delicious and healthy breakfast option that combines veggies and flavors in a guilt-free way.

Ingredients

  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 4 large eggs
  • 4 small corn tortillas
  • 1/2 avocado, sliced
  • 1/4 cup salsa

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the bell pepper, onion, and garlic, cooking until softened.
  3. Stir in the zucchini and spinach, cooking until the spinach wilts.
  4. In a bowl, whisk the eggs and pour them into the skillet, stirring gently until cooked through.
  5. Warm the tortillas in another skillet.
  6. Fill each tortilla with the egg and veggie mixture, and top with avocado and salsa.

Notes

  • Feel free to add any other favorite vegetables.
  • These tacos can be made vegan by substituting eggs with tofu.
