Vegan Sweet Potato Meatballs

A delicious and healthy vegan alternative to traditional meatballs, made with sweet potatoes and spices.

Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, combine mashed sweet potatoes, quinoa, breadcrumbs, nutritional yeast, garlic, smoked paprika, salt, and pepper.

  3. Mix until well combined, then form into small balls.

  4. Place the meatballs on a baking sheet drizzled with olive oil.

  5. Bake for 25-30 minutes until golden brown.

  6. Serve warm, garnished with parsley.
