  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 1 cup cashews, soaked
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 2 cups sliced apples
  • 1 teaspoon cinnamon
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed graham crackers, melted coconut oil, and maple syrup to form the crust.
  3. Press the mixture into the bottom of a springform pan.
  4. Blend soaked cashews, almond milk, vanilla extract, and lemon juice until smooth.
  5. Pour the cashew mixture over the crust and bake for 30 minutes.
  6. In a separate bowl, combine sliced apples with cinnamon and rolled oats.
  7. Layer the apple mixture on top of the cheesecake and bake for an additional 15 minutes.
  8. Let cool and refrigerate for a few hours before serving.
