  • 4 vanilla beans
  • 1/4 cup sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with heavy cream, until just combined.
  6. Split the vanilla beans and scrape out the seeds; fold them into the batter.
  7. Fill the cupcake liners with the batter, filling each about two-thirds full.
  8. Bake for 18-20 minutes until a toothpick inserted comes out clean.
  9. Let cool completely before adding the crème brûlée topping.
  10. Sprinkle sugar on top of each cupcake and use a kitchen torch to caramelize the sugar.
