  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, brown sugar, granulated sugar, butter, vanilla extract, and eggs until combined.
  4. Gradually add the dry ingredients into the wet ingredients and mix until just combined.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
