This Taco Pasta Casserole is a delicious and hearty dish that combines turkey bacon and chicken ham for a unique twist.

  • 1 pound pasta
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions and drain.
  3. In a large skillet, cook the turkey bacon until crispy, then remove and crumble.
  4. Add the onion and bell pepper to the skillet, cooking until softened.
  5. Stir in the chicken ham, diced tomatoes, cumin, and chili powder, and cook for 5 minutes.
  6. Combine the cooked pasta with the meat mixture and half of the cheese in a casserole dish.
  7. Top with the remaining cheese and the crumbled turkey bacon.
  8. Bake for 20-25 minutes or until the cheese is bubbly.

Notes

  • For a spicier kick, add jalapeños.
  • Feel free to substitute ground turkey or beef for the turkey bacon.
