Sweet Potato Rounds with Cranberry, Feta and Hazelnuts

A delightful appetizer featuring sweet potatoes topped with cranberries, feta cheese, and chopped hazelnuts.

Ingredients

  • 2 large sweet potatoes
  • 1 cup cranberries (dried)
  • 1 cup feta cheese, crumbled
  • 1/2 cup hazelnuts, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/2 inch rounds and place them on a baking sheet.
  3. Drizzle with olive oil, and sprinkle with salt and pepper.
  4. Bake for 25-30 minutes until tender.
  5. Remove from the oven and top each round with cranberries, feta, and hazelnuts.
  6. Return to the oven for an additional 10 minutes to heat through.

Notes

  • For a vegan option, substitute feta with a dairy-free cheese.
  • Can be served warm or at room temperature.
