Sweet Potato Breakfast with Eggs

A delicious and nutritious breakfast option that combines sweet potatoes and eggs for a hearty start to your day.

  • 2 sweet potatoes
  • 4 eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. In a bowl, toss the sweet potatoes with olive oil, salt, black pepper, and paprika.
  4. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  5. In the last 10 minutes of cooking, crack eggs on top of the sweet potatoes and return to the oven until the eggs are cooked to your liking.
  6. Remove from the oven, let it cool for a minute, and serve warm.
