Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and zucchini.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the zucchini mixture, mixing until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely before icing.
  9. For the icing, mix together melted butter, brown sugar, powdered sugar, and a splash of milk until smooth. Spread over the cooled cake.
