- 1 cup graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup all-purpose flour
- 1 teaspoon lemon juice
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- Spread half of the cheesecake mixture over the crust, layer sliced strawberries, then top with the remaining cheesecake mixture.
- Bake for 50-60 minutes or until the center is set. Let it cool to room temperature, then refrigerate for at least 4 hours.
- To serve, sprinkle with crumble mixture and fresh strawberries on top.
