  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, cream cheese, sugar, brown sugar, eggs, and vegetable oil.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Blend wet and dry mixtures until just combined.
  5. Spoon the batter into muffin tins.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

  • For a sweeter muffin, increase sugar by 1/4 cup.
  • These muffins freeze well for up to 3 months.
