Spinach Mushroom Quinoa Skillet

  • 2 cups vegetable broth
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Rinse the quinoa under cold water.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add mushrooms and cook until tender, about 5 minutes.
  4. Stir in quinoa, vegetable broth, salt, and pepper; bring to a boil.
  5. Reduce heat, cover, and simmer for 15-20 minutes until quinoa is cooked.
  6. Add spinach and cook until wilted.
  7. Serve warm.
