2 medium zucchinis
1 can (15 oz) chickpeas, drained and rinsed
1 tablespoon olive oil
2 teaspoons curry powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1 onion, diced
3 garlic cloves, minced
1 can (14 oz) diced tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh cilantro, chopped
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, mix zucchinis, chickpeas, olive oil, curry powder, smoked paprika, cayenne pepper, onion, garlic, diced tomatoes, salt, and black pepper.
