Southwest Sweet Potato, Black Bean and Rice Skillet

  • 2 cups diced sweet potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup uncooked rice
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup corn kernels
  • 1 red bell pepper, diced

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced sweet potatoes and cook until they are tender, about 10 minutes.
  3. Stir in the black beans, corn, and bell pepper.
  4. Add the rice, vegetable broth, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
  6. Fluff with a fork and serve warm.
