Southwest Rice and Ground Turkey Skillet

A delicious one-pan meal that combines seasoned ground turkey, rice, and vegetables for a quick dinner option.

Ingredients

  • 1 pound ground turkey
  • 1 cup long-grain rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups chicken broth
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the ground turkey and cook until browned.
  2. Stir in the diced bell pepper and cook for 3 minutes.
  3. Add the rice, black beans, corn, cumin, chili powder, and chicken broth.
  4. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  5. Fluff with a fork and serve warm.
