Slowly Braised Short Rib Ragu

A deliciously rich and indulgent ragu made from slowly braised short ribs, perfect for cozy nights.

Ingredients

  • 2 pounds short ribs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 can (28 oz) crushed tomatoes
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large oven-safe pot, heat the olive oil over medium-high heat.
  3. Season the short ribs with salt and pepper, then sear them in the pot until browned on all sides. Remove and set aside.
  4. Add the onion, carrots, and celery to the pot, cooking until softened.
  5. Stir in the garlic and cook for 1 minute.
  6. Deglaze the pot with red wine, scraping up any browned bits.
  7. Add the beef broth, crushed tomatoes, oregano, and thyme.
  8. Return the short ribs to the pot, cover, and transfer to the oven.
  9. Braise for 3 hours, or until the meat is tender.
  10. Remove the short ribs, shred the meat, and return it to the sauce.

Notes

  • Serve over pasta or polenta for a complete meal.
  • Great for meal prep, this ragu improves in flavor as it sits.
