- 2 pounds short ribs
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 cup red wine
- 2 cups beef broth
- 1 can (28 oz) crushed tomatoes
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Preheat your oven to 300°F (150°C).
- In a large oven-safe pot, heat the olive oil over medium-high heat.
- Season the short ribs with salt and pepper, then sear them in the pot until browned on all sides. Remove and set aside.
- Add the onion, carrots, and celery to the pot, cooking until softened.
- Stir in the garlic and cook for 1 minute.
- Deglaze the pot with red wine, scraping up any browned bits.
- Add the beef broth, crushed tomatoes, oregano, and thyme.
- Return the short ribs to the pot, cover, and transfer to the oven.
- Braise for 3 hours, or until the meat is tender.
- Remove the short ribs, shred the meat, and return it to the sauce.
