- 3 pounds beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup beef broth
- 2 sprigs fresh thyme
- Preheat your oven to 325°F (165°C).
- Season the beef roast with salt and pepper.
- In a large oven-proof pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
- In a bowl, mix together cranberry juice, balsamic vinegar, brown sugar, and minced garlic.
- Pour the mixture over the roast in the pot.
- Add the beef broth and thyme sprigs to the pot.
- Cover the pot and place it in the oven. Braise for 3 hours, or until the meat is tender.
- Remove the pot from the oven, and serve the beef roast with the glaze drizzled over it.
Notes
- Let the roast rest for 10-15 minutes before slicing.
- For extra flavor, marinate the roast overnight in the glaze.
