  • 1 cup cranberry sauce
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the beef roast with salt and pepper, then sear on all sides.
  4. Add chopped onion and minced garlic, sauté until softened.
  5. Pour in the beef broth and cranberry sauce, stirring to combine.
  6. Add rosemary and thyme, cover, and transfer to the oven.
  7. Braise for about 3 hours or until the meat is tender.
  8. Remove from the oven and let rest before slicing.
