Slow Cooker Unstuffed Cabbage Rolls

A delicious and easy recipe for unstuffed cabbage rolls made in a slow cooker, perfect for busy weeknights.

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1 cup uncooked rice
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Chop the cabbage and layer half of it at the bottom of the slow cooker.
  2. In a large bowl, mix the ground beef, rice, onion, garlic, Italian seasoning, salt, and pepper together.
  3. Form the meat mixture into balls and place them on top of the cabbage in the slow cooker.
  4. Pour the tomato sauce and diced tomatoes over the meatballs and then layer the remaining cabbage on top.
  5. Cook on low for 6-8 hours or on high for 4 hours, until the meat is cooked through and the rice is tender.

Notes

  • This recipe can be made ahead of time and stored in the refrigerator before cooking.
  • Feel free to add other vegetables like bell peppers or carrots for extra flavor.
