Shrimp & Lobster Cheddar Bay Biscuit Pot Pie

A rich and delicious pot pie featuring shrimp and lobster, topped with flaky Cheddar Bay biscuits.

  • 1 pound shrimp, deveined
  • 1 pound lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 2 cups chicken stock
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1/4 cup all-purpose flour
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 package Cheddar Bay biscuit mix
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot over medium heat, melt butter and sauté the onions, celery, and carrots until softened.
  3. Add the shrimp and lobster, cooking for a few minutes until shrimp is pink.
  4. Stir in the flour and cook for 1 minute.
  5. Add the chicken stock and heavy cream, stirring until thickened.
  6. Season with Old Bay, salt, pepper, and lemon juice.
  7. Pour the seafood filling into a baking dish.
  8. Prepare the Cheddar Bay biscuit mix according to package instructions and spoon over the seafood mixture.
  9. Bake for 25-30 minutes or until biscuits are golden brown.

Notes

  • This recipe can be made ahead of time; just add the biscuit topping before baking.
  • For extra flavor, sprinkle fresh herbs on top before serving.
