- 1 pound shrimp, peeled and deveined
- 1 pound lobster meat, cooked and chopped
- 1 pound crab meat, lumps preferred
- 4 cups fish stock
- 1 cup heavy cream
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 tablespoons butter
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery and sauté until soft.
- Stir in the tomato paste, thyme, and paprika, and cook for another 2 minutes.
- Add the fish stock and bring to a boil. Reduce heat and let simmer for 15 minutes.
- Stir in the heavy cream, shrimp, lobster, and crab meat. Cook for an additional 10 minutes until the seafood is heated through.
- Season with salt and pepper to taste before serving.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- Serve with crusty bread to soak up the bisque.
