Seafood Bisque

A luxurious and creamy seafood bisque that warms the soul and delights the palate.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound lobster meat, cooked and chopped
  • 1 pound crab meat, lumps preferred
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 tablespoons butter
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery and sauté until soft.
  2. Stir in the tomato paste, thyme, and paprika, and cook for another 2 minutes.
  3. Add the fish stock and bring to a boil. Reduce heat and let simmer for 15 minutes.
  4. Stir in the heavy cream, shrimp, lobster, and crab meat. Cook for an additional 10 minutes until the seafood is heated through.
  5. Season with salt and pepper to taste before serving.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • Serve with crusty bread to soak up the bisque.
