  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup butter, melted
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the rhubarb, sugar, vanilla extract, and cornstarch.
  3. In another bowl, combine flour, oats, brown sugar, and salt.
  4. Add the melted butter to the dry ingredients and mix until crumbly.
  5. Press half of the mixture onto the bottom of a greased baking dish.
  6. Spread the rhubarb mixture over the crust.
  7. Sprinkle the remaining crumb mixture on top.
  8. Bake for 30-35 minutes or until golden brown.
  9. Let cool before cutting into bars.

Notes

  • For extra flavor, add some cinnamon to the crumb mixture.
