Raspberry Tiramisu

A delectable dessert that combines the rich, creamy texture of traditional tiramisu with the fresh, tangy flavor of raspberries, offering a delightful twist on a classic favorite.

  • 2 cups fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Gradually add the granulated sugar and vanilla extract, then fold in the mascarpone cheese until smooth.
  2. Dip each ladyfinger briefly in the cooled espresso and layer them in a dish.
  3. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the raspberries.
  4. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
  5. Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.

Notes

  • For best results, use only fresh raspberries.
  • This dessert can be prepared a day in advance for enhanced flavors.
