Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture and stir until just combined.
  6. In a small bowl, mix cream cheese and powdered sugar until smooth.
  7. Fill each muffin cup about halfway with the batter, add a spoonful of cream cheese mixture, then top with more batter.
