Pumpkin Streusel Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup canned pumpkin puree
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup quick oats
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine pumpkin puree, oil, sugar, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients into the wet mixture and stir until combined.
  5. Pour batter into a greased loaf pan.
  6. In a small bowl, mix brown sugar, oats, and walnuts for the streusel topping; sprinkle on top of batter.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Let cool, then slice and enjoy!

Notes

  • Best served warm with butter.
  • Can be made ahead and frozen for later.
