  • 1 cup pumpkin puree
  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup milk
  • 1/4 cup olive oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the pumpkin puree, honey (or maple syrup), milk, olive oil, and eggs.
  3. In another bowl, combine the whole wheat flour, protein powder, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the muffin tins, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
