  • 1/2 teaspoon ground cinnamon (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a bowl, mix the dry ingredients: flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, combine pumpkin puree, sugar, oil, eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. In a separate small bowl, mix brown sugar, oats, and cinnamon for the crumb topping.
  6. Fill each muffin cup with batter and sprinkle the crumb topping evenly.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow cooling before serving.
