1 cup pomegranate juice
1 cup sugar
1/2 cup heavy cream
1/4 cup unsalted butter
1/4 teaspoon salt
1 teaspoon vanilla extract
Instructions
In a saucepan, combine pomegranate juice and sugar over medium heat. Stir until dissolved.
Add heavy cream, butter, and salt. Continue to cook, stirring frequently, until the mixture reaches 245°F (firm-ball stage).
Remove from heat and stir in vanilla extract.
Pour the caramel into a greased dish and allow to cool completely.
Once cooled, cut into squares and serve.
