Pioneer Woman Potato Soup

A creamy and delicious potato soup that’s enhanced with the rich flavor of turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped onion
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and crumble it, leaving the drippings.
  2. Add onions and garlic to the pot, cooking until soft.
  3. Add diced potatoes and chicken broth. Bring to a boil and then let simmer until the potatoes are tender.
  4. Stir in the heavy cream, salt, pepper, and thyme.
  5. Use a potato masher to blend some of the potatoes for a thicker texture.
  6. Serve hot, topped with crumbled turkey bacon.

Notes

  • This soup can be adjusted for a thicker or thinner consistency by varying the amount of cream added.
