Pecan Upside

A delicious take on the classic upside-down cake, featuring rich pecans for an indulgent dessert.

  • 1 cup chopped pecans
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt the butter and stir in brown sugar until well combined. Pour the mixture into a prepared cake pan and sprinkle chopped pecans on top.
  3. In a separate bowl, mix flour, baking powder, baking soda, and salt.
  4. In another bowl, beat granulated sugar and eggs until light and fluffy, then add the vanilla.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter over the pecan layer in the cake pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow to cool before inverting onto a serving platter.

Notes

  • For a richer flavor, use dark brown sugar instead of light brown sugar.
  • Serve warm with a scoop of vanilla ice cream.
