  • 4 roasted poblano peppers
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the poblano peppers until the skins are charred, then place in a bowl and cover to steam.
  3. Once cooled, peel the skins off the peppers and chop.
  4. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
  5. Add the roasted poblano peppers, vegetable broth, cumin, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Blend the soup until smooth, then stir in the heavy cream.
  8. Serve warm, garnished with chopped cilantro if desired.
