  • 4 cups chicken broth
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent.
  2. Add ground turkey and turkey bacon, cook until browned.
  3. Stir in diced tomatoes, chicken broth, and Italian seasoning.
  4. Bring to a boil, then add pasta and cook until tender.
  5. Fold in spinach and ricotta cheese.
  6. Top with mozzarella cheese and let melt before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
