Mouthwatering One Pot Lasagna Soup

A hearty and delicious one pot lasagna soup that brings all the flavors of traditional lasagna into a comforting bowl of soup.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken
  • 1 tablespoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add diced onion and minced garlic; sauté until onion is translucent.
  3. Stir in diced tomatoes, beef broth, broken lasagna noodles, and Italian seasoning.
  4. Bring to a boil, then reduce heat and simmer until noodles are tender.
  5. Stir in ricotta cheese and half of the mozzarella and Parmesan; mix until melted.
  6. Serve hot, garnishing with remaining cheese.

Notes

  • For extra flavor, add fresh basil before serving.
  • This dish can be stored in the refrigerator for up to 3 days.
