Mouthwatering One Pot Lasagna Soup

A comforting and flavorful one pot lasagna soup that’s perfect for family dinners.

  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, brown the Italian sausage over medium heat until cooked through.
  2. Add onions and garlic and sauté until onions are translucent.
  3. Stir in the chicken broth, tomato sauce, diced tomatoes, lasagna noodles, basil, oregano, and red pepper flakes.
  4. Bring to a boil, then reduce heat and simmer until noodles are tender.
  5. Stir in ricotta cheese, and top with mozzarella and Parmesan. Cover until cheese is melted.

Notes

  • For added flavor, consider using fresh herbs.
  • This soup can be made ahead of time and reheated.
