Mini German Pancakes Recipe

Try these delightful mini German pancakes topped with turkey bacon for an easy and delicious breakfast.

  • 1 cup all-purpose flour
  • 1 cup milk
  • 4 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 8 slices turkey bacon

Instructions

  1. Preheat the oven to 425°F (220°C) and place a muffin tin inside to heat up.
  2. In a mixing bowl, whisk together the flour, milk, eggs, sugar, vanilla, and salt until smooth.
  3. Once the muffin tin is hot, remove it from the oven and add a small amount of butter to each cup, allowing it to melt.
  4. Pour the batter into the muffin cups, filling them about 2/3 full.
  5. Add a piece of turkey bacon into each cup on top of the batter.
  6. Bake for 15-20 minutes, or until the pancakes are puffed up and golden brown.
  7. Carefully remove the pancakes from the muffin tin and serve immediately.

Notes

  • For a sweeter option, add powdered sugar on top before serving.
  • These pancakes can also be topped with fresh fruits or maple syrup.
