  • 2 cups corn, grilled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled macaroni, corn, tomatoes, onion, cotija cheese, and cilantro.
