  • 1 avocado, diced

  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • 1/4 cup mayonnaise
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. In a large bowl, combine corn, bell pepper, avocado, red onion, and cilantro.
  3. Add the cooked pasta to the bowl and toss to combine.
  4. In a separate bowl, whisk together the lime juice, mayonnaise, chili powder, cumin, and salt.
  5. Pour the dressing over the pasta salad and mix well.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
