- 8 ounces penne pasta
- 4 slices turkey bacon
- 1 cup corn kernels
- 1/2 cup diced red onion
- 1/4 cup fresh cilantro, chopped
- 1/2 cup diced red bell pepper
- 1 teaspoon chili powder
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1/4 cup crumbled feta cheese
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a skillet, cook the turkey bacon until crispy. Remove and crumble.
- In a large bowl, combine cooked pasta, corn, red onion, cilantro, red bell pepper, and crumbled bacon.
- In a separate bowl, mix mayonnaise, lime juice, and chili powder. Fold into pasta mixture.
- Add crumbled feta cheese and toss gently to combine. Chill in the refrigerator before serving.
Notes
- For added flavor, grill the corn before adding it to the salad.
- Adjust the spice level by adding more or less chili powder.
