Mexican Street Corn Pasta Salad

A creamy and tangy pasta salad inspired by the flavors of Mexican street corn, featuring turkey bacon for added depth.

  • 8 ounces penne pasta
  • 4 slices turkey bacon
  • 1 cup corn kernels
  • 1/2 cup diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced red bell pepper
  • 1 teaspoon chili powder
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/4 cup crumbled feta cheese

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine cooked pasta, corn, red onion, cilantro, red bell pepper, and crumbled bacon.
  4. In a separate bowl, mix mayonnaise, lime juice, and chili powder. Fold into pasta mixture.
  5. Add crumbled feta cheese and toss gently to combine. Chill in the refrigerator before serving.

Notes

  • For added flavor, grill the corn before adding it to the salad.
  • Adjust the spice level by adding more or less chili powder.
