- 2 cups corn kernels
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1 cup cotija cheese, crumbled
- 1 jalapeño, diced (optional)
- 1/2 cup mayonnaise
- 1 teaspoon chili powder
- 1 tablespoon lime juice
- Salt and pepper to taste
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the corn, cherry tomatoes, red onion, cilantro, and jalapeño.
- Add the cooled pasta and mix well.
- In a separate bowl, whisk together the mayonnaise, chili powder, lime juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Garnish with cotija cheese and additional cilantro if desired. Serve chilled.
