Mexican Street Corn Pasta Salad

Ingredients

  • 8 ounces pasta
  • 2 cups corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup cotija cheese, crumbled
  • 1 jalapeño, diced (optional)
  • 1/2 cup mayonnaise
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the corn, cherry tomatoes, red onion, cilantro, and jalapeño.
  3. Add the cooled pasta and mix well.
  4. In a separate bowl, whisk together the mayonnaise, chili powder, lime juice, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Garnish with cotija cheese and additional cilantro if desired. Serve chilled.

Notes
