Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion

Delight in these easy Mediterranean Quesadillas filled with spinach, feta, mozzarella, and red onion.

Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red onion, thinly sliced
  • 4 large tortillas
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add red onion and sauté until softened.
  3. Add spinach and cook until wilted.
  4. Remove from heat and mix in feta and mozzarella.
  5. Place mixture on half of each tortilla, fold over, and cook in the pan until golden brown.
  6. Cut and serve warm.

Notes

  • For added flavor, consider adding chopped sun-dried tomatoes or olives.
  • Serve with a side of tzatziki for dipping.
