  • 4 fillets cod
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut sheets of parchment paper into rectangular pieces.
  3. Place a cod fillet in the center of each sheet.
  4. Drizzle olive oil over the fish and add lemon slices on top.
  5. Add cherry tomatoes, zucchini, red bell pepper, and garlic around the fish.
  6. Sprinkle oregano, salt, and black pepper over the ingredients.
  7. Fold the parchment paper to seal the packet tightly.
  8. Place the packets on a baking sheet and bake for 15-20 minutes.
  9. Serve immediately and enjoy!
