Louisiana Red Beans and Rice

A delicious and healthy take on the classic Louisiana red beans and rice, featuring turkey bacon for added flavor.

Ingredients

  • 1 cup dried red beans
  • 4 cups water
  • 4 ounces turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 2 cups cooked brown rice
  • salt to taste
  • black pepper to taste

Instructions

  1. Soak the red beans overnight in water.
  2. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  3. Add onion, garlic, bell pepper, and celery to the pot and sauté until softened.
  4. Add soaked beans, water, thyme, smoked paprika, cayenne pepper, and return the bacon to the pot.
  5. Bring to a boil, then reduce heat and simmer until beans are tender.
  6. Serve over brown rice and season with salt and black pepper to taste.

Notes

  • For extra flavor, add a bay leaf while simmering the beans.
  • Serve with hot sauce for a spicy kick.
