  • 8 ounces turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 teaspoons cumin
  • 1 teaspoon thyme
  • 1 teaspoon cayenne pepper
  • 2 bay leaves
  • Salt to taste
  • Black pepper to taste
  • 4 cups cooked rice

Instructions

  1. Rinse and soak the red beans overnight in water.
  2. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  3. Add the onion, garlic, bell pepper, and celery to the pot and sauté until softened.
  4. Stir in the soaked beans, chicken broth, cumin, thyme, cayenne pepper, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, until beans are tender.
  6. Add the crumbled turkey bacon back into the pot. Season with salt and black pepper to taste.
  7. Serve over cooked rice.

  • For best flavor, let the dish sit for a few hours or overnight before serving.
